They are made with chickpea flour for added protein and to make them gluten-free. But, you can easily sub with regular flour if you don’t have any.
Add chocolate chips for an even sweeter treat, and serve with maple syrup and your favorite toppings.
Let’s get cooking!
EASIEST & BEST VEGAN WAFFLES EVER
WHAT YOU'LL NEED:
2 cups chickpea flour
2 teaspoons baking powder
1 teaspoon fine sea salt
1 3/4 cups water
1/4 cup maple syrup
3 tablespoons olive oil
1/4 cup dairy-free chocolate chips (optional, but why not?)
HOW TO MAKE IT:
Preheat your waffle maker.
In a large bowl, whisk together the chickpea flour, baking powder and salt.
Slowly whisk in the water until blended and smooth. Then, whisk in the maple syrup and oil.
Stir in chocolate chips, if using.
Spray the waffle iron with nonstick cooking spray. Pour about 2/3 cup of the batter on the iron (the batter will be quite thin and liquid. Don’t worry, that’s ok).
If using chocolate chips, stir the batter well before pouring each time since the chips will sink to the bottom.
Cook the waffles according to your waffle maker instructions. The waffles should end up a deep golden color.
Remove waffle iron and repeat with remaining batter.
Keep waffles warm in a 200°F oven while you cook the entire batch. This recipe will yield about 5 large waffles.
