No need to slave over a hot oven to get your fix. And, with natural, healthy ingredients, you can indulge without guilt.

EASY PEANUT BUTTER & CHOCOLATE NO-BAKE COOKIES

WHAT YOU’LL NEED:

  • 1/4 cup maple syrup

  • 2 Tbsp non-dairy milk

  • 3 Tbsp coconut oil (or vegan butter)

  • 3 Tbsp unsweetened cacao powder

  • 1 1/4 cups quick oats

  • 1/3 cup natural peanut butter

  • 1/2 tsp vanilla extract

  • 1 Pinch sea salt

  • 1/2 cup chopped vegan chocolate


HOW TO MAKE IT:

  1. Line a baking sheet or tray with parchment or wax paper.

  2. Add maple syrup, milk, coconut oil, and cacao powder to a medium saucepan and bring to a low boil over medium heat, stirring frequently.

  3. Once bubbling, let boil for 1 minute. Then remove from heat and add oats, peanut butter, vanilla, salt, and dark chocolate and combine and fully incorporate all ingredients.

  4. Use a tablespoon to scoop the batter onto the prepared tray.

  5. Transfer the tray to the fridge and allow to cool and harden- about 15 minutes

  6. Keep covered in the refrigerator.
