These are by far the easiest vegan meatballs I’ve made. And, the texture is on point! I swear you could almost fool someone into thinking they are real meat.
Just process all the ingredients together, shape the mixture into little balls, and in the oven they go while you prepare your pasta and sauce... that simple!
These are so versatile, you can serve them in many ways: over pasta, in a sandwich, with a bowl of greens, or my favorite way with some marinara sauce and polenta... yum!
It’s the perfect recipe for a hassle-free delicious meal that will taste like you slaved over a hot stove all day.

EASY VEGAN ‘MEAT’BALLS
WHAT YOU'LL NEED:
2 cans of chickpeas (15oz each) drained and rinsed
3 Tbsps. flaxseed meal
8 Tbsps. water
1/2 Cup breadcrumbs
1/4 Cup nutritional yeast
1/2 Tbsp. garlic powder
2 tsp. onion powder
1/2 tsp. salt, or to taste
1/2 tsp. dried oregano
1/2 tsp. dried basil
1/2 tsp. dried parsley
HOW TO MAKE IT:
Preheat oven to 425 degrees.
In a large mixing bowl, mix the ground flaxseed and water. Set aside for at least 5 minutes to thicken.
Prepare the chickpeas by placing them in a food processor and pulse until there are almost no whole beans left. Once ready, add the processed chickpeas to the large bowl with the flaxseed/water mixture.
Then, add the remaining ingredients and mix well using a wooden spoon.
Scoop the mixture (about a heaping Tablespoon) and roll into balls. Place on a baking sheet covered with parchment paper or a silpat liner.
Bake for 30-35 minutes, turning about halfway through.
Serve with your favorite pasta sauce.
