EASY VEGAN COQUITO

Imagine if EggNogg had a sexier, sweeter cousin who was Puerto Rican... that's Coquito!




Not only is it vegan. It's made with healthy ingredients so you can enjoy the sweet taste of traditional coquito without a single bit of guilt. Try it with or without rum... you will love this version!

Nothing says "Feliz Navidad" like Coquito!


EASY VEGAN COQUITO



WHAT YOU'LL NEED:

  • 1 Cup raw cashews

  • 1 Cup canned coconut milk

  • 1 1/2 Cups almond milk

  • 12 soft pitted dates

  • 2 tsp pure vanilla extract

  • 1 tsp nutmeg

  • 1 1/2 tsp cinnamon powder

  • Pinch of salt

  • 2 Tbsp maple syrup

  • 4 Tbsp white rum (optional)


HOW TO MAKE IT:

  1. Place cashews in a glass bowl and cover with very hot water. Soak cashews for at least 10 minutes, then drain and discard water. (As an alternative, you can keep your Coquito raw by pre-soaking cashews in room temperature water for at least two hours or overnight).

  2. If your dates are not soft, soak them in hot water along with the cashews.

  3. Once your cashews and dates are ready, place all ingredients in a high-speed blender and process on high for a few minutes until consistency is very smooth and everything is blended together.

  4. Taste and adjust flavor by adding more cinnamon, nutmeg or rum.

  5. You can strain your Coquito using a nut milk bag or cheesecloth to make it smoother, but that’s a matter of preference and not really necessary.

  6. Enjoy!
