I know we should get on with our New Year's Resolutions, but come on!!! There's still time for one more treat! Although, this CHOCOLATE CHIP BANANA BREAD WITH MAPLE WALNUT TOPPING is made with some good-for-you ingredients, so you can easily slide into your new year resolution with this one. You're welcome!



This banana bread is made with oat flour, bananas, unsweetened apple sauce and coconut sugar. You see? I got you covered! Enjoy!!




VEGAN CHOCOLATE CHIP BANANA BREAD WITH CARAMELIZED WALNUT TOPPING


WHAT YOU'LL NEED:


For the banana bread:

  • 3 ripe bananas, mashed

  • 1/4 cup + 2 Tbsp unsweetened apple sauce

  • 2 Tbsp coconut oil

  • 1/3 cup coconut sugar

  • 1 tsp vanilla

  • 1/4 tsp salt

  • 1/2 Tbsp baking powder

  • 1/2 tsp baking soda

  • 1 1/2 cups ground oats/oat flour

  • 1/4 cup non-dairy chocolate chips

For the caramelized walnut topping:

  • 1/2 cup walnuts, chopped

  • 2 Tbsp butter

  • 2 Tbsp maple syrup


HOW TO MAKE IT:

  1. Prepare the topping first by melting the butter in a small sauce pan. Then, add walnuts and maple syrup. Let simmer for 2 minutes, and set aside.

  2. Preheat the oven to 350F degrees. Lightly spray a standard loaf pan (9 x 5) with cooking spray, set aside.

  3. In a medium bowl whisk together the dry ingredients: salt, baking powder, baking soda and flour. Set aside.

  4. In a large bowl mix together the mashed bananas, oil, vanilla, applesauce and sugar. Mix until fully combined.

  5. Pour dry ingredients into the wet mixture. Stir together until no lumps remain.

  6. Fold in the chocolate chips.

  7. Pour the batter into the prepared loaf pan and then spoon the maple walnut topping over the batter.

  8. Bake in preheated oven for 1 hour and 15 minutes. Halfway through baking, loosely cover the top with foil. Allow to cool.
